Hello all, hope your week is going great so far. Just here to share my Monday meal prep. I used to do my meal preps on Sunday, but since I generally cook a large meal on Sunday and have leftovers, I switched to Monday nights. Well after last night I am seriously considering going back to Sundays. I’m not sure why and how, but I was in the kitchen forever last night. I do not have a peeler or slicer, or whatever it is that people cut potatoes with nowadays, so cutting sweet potatoes are always a nightmare!
I haven’t had roasted vegetables in a while and have been wanting to make some. I line the baking tray with olive oil and I also toss the vegetables around in the oil in a bowl. I generally season them with paprika, garlic powder, onion salt and salt. That does vary sometimes, might do a dash of white pepper or chili powder. I usually roast:
Peppers, red, yellow, orange
I also had some of my basics that I can eat all the time: baked sweet potatoes, grapes and bananas. I swear by meal prepping for not just my weight loss goals but overall health. It helps me stay focused and on track, because I honestly am not disciplined enough to do it on a day to day basis.
