This week’s meal prep is pretty light. I haven’t done stuffed pepper in a while and thought I’d give it a go. Before I would simply stuff them with ground beef, cheese and corn. But since I stay away from meat and dairy M-F I have to find alternatives. I stuffed these with black beans, brown rice and red peppers. And I must admit they are pretty darn good! Black beans are great because they are loaded with protein, fiber and iron. The protein especially is loaded which is just another example of not needing to have animals as a protein source. I also have baked sweet potatoes again simply because I never grow tired of these. I can eat these for weeks at a time before I feel the need to switch it up. I changed up most of the fruits this week as I have pineapples, red grapefruit, kiwis and plums.
